The result is a sake with pronounced umami, higher acidity, and a rich, layered character that evolves beautifully with warming.

From 2000, converted from a forest system to a sake brewing by employees. Raw rice is used properly according to sake quality, mainly in Yamada Nishiki and Omachi, which are suitable for sake brewing, and the water prepared water is used in the Gotanda River flowing in the storehouse.
