Yamane Shuzo was founded in 1887 in Tottori City, Tottori Prefecture, in a historic area called Hioki Township where cherry trees bloomed in midwinter, inspiring the Hiokizakura name. The brewery revived the rare Goriki sake rice variety, unique to Tottori, working with local farmers to reduce pesticide use and restore this heritage grain to production. Using the demanding kimoto method across its lineup, Hiokizakura is known for warm-temperature drinking styles and sake that reflects the rugged coastal climate of the San'in region.
