Harushika, meaning spring deer, is produced by Imanishiseibeishouten in Nara, a city widely regarded as the birthplace of Japanese sake and home to world heritage sites including Todai-ji and Kofuku-ji. Founded in 1884, the brewery takes its name from the sacred deer of Kasuga Grand Shrine and pursues a brewing philosophy encapsulated in the motto polish the rice, polish the water, polish the technique, polish the heart, maintaining the ancient Nanto-jiro tradition of mellow, refined sake. Today Harushika is exported to more than ten countries and is especially recognized for its ultra-dry junmai range.
