Hananomai
Established in 1864, Hananomai Brewing takes its name from an ancient harvest dance celebrating the flower of the rice plant, and sources 100 percent of both its rice and water exclusively from Shizuoka Prefecture. Even at the daiginjo level, brewers forgo machines and rely on hand-crafted techniques guided by experience and intuition, and the brewery has cultivated its own internal toji program to ensure deep local expertise. Hananomai has earned Gold Awards at the Japan Sake Awards for three consecutive years and has expanded its repertoire with experimental releases such as Abyss, fermented with white wine yeast from Chablis.
