Kinshihai Shuzo, based in Gosen City, Niigata Prefecture, released the Echigotoji brand in 1983 as a direct expression of the classical Niigata brewing tradition shaped by the Echigo toji lineage of master craftsmen. The brewery's stated creed is to produce sake that quietly seeps into the hearts of those who drink it through familiar, food-compatible brewing rooted in local seasonal ingredients. Echigotoji received the highest gold award at the National Kan-sake Contest and has won recognition at multiple subsequent editions for its performance as a warmed sake.
