Yukikage
Kinshihai Shuzo Co., Ltd., established in 1824 in Gosen City, Niigata Prefecture, draws on soft water from an on-site spring known as Tengu's spring water, originating from the sacred Mount Haku, to produce sake with a delicate, balanced character. Yukikage, meaning 'Snow Shadow,' is the brewery's signature Tokubetsu Junmai, fermented with s-3 yeast at low alcohol levels for a light, smooth texture and gentle fruity aroma in a style described as true Niigata. The brand won a gold award at the US National Sake Appraisal Joy of Sake in 2006, and Kinshihai has accumulated multiple gold medals at the national sake competition.
