Toshimori Shuzo's Sakehitosuji Daiginjo is polished to 50%, following the brewery's philosophy of brewing every sake at ginjo standards with Akaiwa-grown Omachi rice. The result is a fruity, finely textured daiginjo with the deep, round umami that distinguishes Omachi.
