Miyama Nishiki grown with reduced pesticides and organic fertilizers in Nagano is polished to 55% for this junmai ginjo namagenshu from the Pekora Juku label. Bottled undiluted and unpasteurized, it presents the full, uncut character of the rice and the brewery's extended low-temperature fermentation.
