西堀酒造創立於1872年(明治5年),是栃木縣小山市一家被列為登錄有形文化財的酒藏,以日光山脈湧出的清冽水源釀造清酒。代表品牌「門外不出」誕生於將小批量精釀美酒引入本地的心願,如今九成以上仍在栃木縣內消費。酒藏積極挑戰新領域,涵蓋全部使用古代米的「愛妻」、日本首創的透明罐釀造「Clear Brew」(已取得專利)以及LED彩色光照射發酵酒「Illumina」,以「自由開放的釀造」為座右銘,將傳統與創新融為一體。
