
Description
Gohyakumangoku rice, polished to 55%, forms the base of this junmai ginjo from a Nagaoka, Niigata brewery that draws on snowmelt groundwater from the Nishiyama mountain range. Young brewers crafted this expression to balance the clean, lean character of the variety with gentle rice umami and a refreshing acidity.
