Kodaimai Akamaishu is a sake made from ancient red rice varieties at Noda Shuzo in Fukuoka Prefecture. Red rice, predating the modern polished white varieties, produces a distinctly earthy, russet-hued sake with a deep, mineral-rich flavor profile.
