Kaganoi Junmaishu is a pure-rice sake from Itoigawa's Kaganoi Sake Brewery, polished to 65% using locally grown rice and the brewery's medium-hard water, which imparts greater depth and umami than typical Niigata sake. The subtle aroma leads to a full-bodied, rice-forward palate with crisp acidity in the finish.
