全量使用福井縣限定酒造好適米的純米大吟釀。從29BY釀造分起使用,完成商品化。柔和的吟釀香、上品的口味與溫柔的入口感是其特徵。"越之雫"是2003年登記品種的福井縣限定酒造好適米,以兵庫北錦為父本、美山錦為母本交配而成。與同為奧越產的"五百萬石"相比,蛋白質含量更高,精白度更高,更適合釀造吟釀酒。
