Description

Ginjo Yamatonokaori, meaning fragrance of Yamato, from Kita Shuzo in Nara, directly invokes the ancient name Yamato, which referred to the Nara region and by extension to classical Japan itself, framing the ginjo's aromatic character as an expression of the region's identity. Rice milled to at least 60 percent and low-temperature fermentation contribute the light, fruit-forward floral notes that ginjo-grade sake is defined by. Nara's position as one of the oldest centers of Japanese civilization and sake brewing gives this fragrance-focused ginjo a historical depth that complements its aromatic profile.
