Made with Benisashi plums from Fukui Prefecture and rock sugar steeped in 1992-vintage aged sake, this koshu umeshu draws on a base sake noted for its heavy umami and full body derived from Nippon Bare rice. Decades of aging integrate the plum fruit into a rich, cohesive liqueur with a mellow, stable character.
