Fukui Prefecture Benisashi plums are macerated in 1991-vintage aged sake with rock sugar to create this koshu umeshu. Long room-temperature maturation of the base sake in the earthen-walled Gifu storehouse develops the gentle, enveloping sweetness that defines this brewery's approach to plum liqueurs.
