Fukui Prefecture Benisashi plums, valued for their aromatic character and meaty flesh, are macerated in 2005-vintage aged sake with rock sugar in this koshu umeshu. The extended maturation of the base sake contributes depth and a smooth mouthfeel that integrates with the plum's acidity rather than competing with it.
