Daiginjo Koju from Kita Shuzo in Nara uses the imperial-resonant name Koju, meaning emperor's camphor tree, to frame this as a sake of regal prestige befitting Nara's status as Japan's first permanent imperial capital. The daiginjo classification requires rice polished beyond 50 percent and slow, low-temperature fermentation to develop the extraordinarily delicate, fragrant character associated with the highest grade of sake production. Nara's clean, ancient brewing tradition and access to pure Yoshino mountain water support the refined production necessary for this premium expression.
