Tsuchida 10 is an experimental junmai from Tsuchida Shuzo in Kawaba, Gunma, brewed within the all-kimoto framework the brewery adopted when it converted entirely to natural fermentation in 2017. No commercial yeast, added lactic acid, or other additives are used, and rice is sourced from Gunma with minimal polishing.
