Description
Benisashi plums from Fukui Prefecture are macerated with rock sugar in 1995-vintage aged sake to form this koshu umeshu. The brewery uses a base sake whose character has been shaped by ambient-temperature aging across more than two decades, producing a layered sweetness that integrates naturally with the plum's tartness.
