- 1626The founder, who had served as a samurai at the Sakai checkpoint (the largest in the Kaga Domain) during the Edo period, began brewing sake alongside his duties in the 3rd year of Kanei (1626), marking the origin of Hayashi Shuzojo.
- 2011Hideki Hayashi became the youngest toji (master brewer) in Toyama Prefecture, going on to explore new possibilities for the brewery's sake.
- 2013The brewery launched its new premium brand "Hayashi," crafted entirely from junmai-series sake using carefully selected rice from across Japan.
