Yuumura is produced by Murayu Shuzo, established in 2002 in Akiba Ward, Niigata City, by third-generation owner Murayama Kensuke, deliberately challenging the prefecture's iconic tanrei karakuchi tradition with an elegant sweetness reminiscent of wasanbon sugar. The brewery ranks its products by sweetness level rather than conventional grade designations, and intentionally withholds polishing ratio, sake meter value, and acidity data to prevent preconceptions from shaping the experience. Small-batch production and meticulous craftsmanship underpin each release of this unconventional Niigata label.
