Kagaginjo is brewed by Kaetsu (Ka越), a brewery established in 1961 through the merger of three Hokuriku region breweries, now based in Komatsu City, Ishikawa Prefecture. Komatsu is a prime growing region for Gohyakumangoku sake rice, and the brewery draws on the pristine snowmelt waters of Mount Hakusan to craft sake with delicate, understated aroma and pure umami. Kaetsu has earned 12 Gold Prizes at the National New Sake Competition, placing it among the top-ranked breweries in the Hokuriku region.
