Dewasansan, variedade de arroz para sake originária de Yamagata e derivada do Miyamanishiki, é polido a 50% para este junmai ginjo hi-ire (pasteurizado) da Sugiisami Warabioka Shuzo em Yuza, Yamagata. A pasteurização única estabiliza o sake preservando o caráter frutado e suavemente seco típico do Dewasansan. A água subterrânea do Monte Chokai, classificada como média-suave, contribui para o toque de boca limpo e sem forçamento.
