A região de Tojo, em Hyogo, pode ser dividida em três partes, do sul para o norte: Shimo-Tojo, Naka-Tojo e Kami-Tojo. Dentre estas, Kami-Tojo é considerada a área mais adequada para o cultivo do Yamada Nishiki, e tem sido utilizada para esse fim desde os primórdios. Este é um sake ultra-premium elaborado exclusivamente com arroz Yamada Nishiki especial proveniente da região de Kami-Tojo.
