O processo de produção ginjo emprega fermentação lenta e fria com leveduras especialmente cultivadas que intensificam o desenvolvimento de ésteres. A antiga cultura cervejeira de Nara informa o equilíbrio entre a elegância aromática e a substância típica da região, impulsionada pelo arroz.
