O Tokubetsu Honjozo da Chiyonohikari é produzido com Gohyakumangoku polido a 54%, superior ao polimento típico de sake de mesa, conferindo refinamento elevado a este honjozo. Fundada em 1860 em Myoko, no famoso país das neves de Niigata, a cervejaria usa água de degelo para produzir um sake leve e nítido, em consonância com o renomado estilo seco tanrei karakuchi de Niigata.
