Desde 1855, utiliza agua subterranea do sopé sul do Monte Akagi para produzir sake com cuidado e dedicacao, seguindo o lema do 'feito a mao'. Na etapa de prensagem do 'mash', sao usados tradicionais 'sacos de sake'. Por terem aberturas maiores, esses sacos permitem a saida do liquido com mais facilidade, conferindo um efeito de maturacao e resultando num sabor pleno e encorpado.
