Description
Kura no Hana rice, a sake-specific variety developed and grown in Miyagi, is polished to 50% for this all-Miyagi tokubetsu junmai, produced by the brewery's young team under the Inspiration label. Despite the tokubetsu junmai classification, the koji and mash preparation matches ginjo-level effort, resulting in a clean palate with defined rice umami and a citrus-tinted freshness typical of raw Miyagi sake. Miyagi yeast and soft Zao spring water complete the local provenance.
