Miyama Nishiki from Miyagi is polished to 50% for this lightly cloudy junmai ginjo, where fine rice solids are left in the bottle to add a creamy texture and gentle sweetness alongside the characteristic clean Zao flavor. The usunigori presentation softens the contours of the 50% polish while keeping the sake fresh and approachable. Soft underground spring water from the Zao mountains supports the delicate profile.
