The Echigosone Daiginjo is a terroir-specific expression of Asazuma Shuzo's Yukinomaboroshi label, named after the Echigo Sone area of Niigata Prefecture where the brewery's locally sourced sake rice is cultivated. Brewed in the light, dry Niigata tradition with the kimoto method's added complexity, it showcases a regionally rooted premium ginjo character.
