The Yukinomaboroshi ('Phantom of Snow') Daiginjo is the flagship premium expression from Asazuma Shuzo in Niigata, named for the ephemeral beauty of snow that defines the Japan Sea coastal winters. Brewed with the traditional kimoto method alongside careful ginjo fermentation, it achieves the clean acidity and deep complexity for which this historic brewery is known.
