This Yoemon expression is a Yamahai Junmai produced with Ginginga rice polished to 50% and bottled as a direct-press (jikagumi) namagenshu, unfiltered and undiluted. Yamahai fermentation builds natural lactic acidity and complex umami over a longer fermentation, while the genshu bottling at cask strength amplifies the bold, layered character of this Iwate sake.
