Gohyakumangoku rice polished to 55% is used for this tokubetsu honjozo, a signature product of the Notaka range named Daiichigi (highest principle). Brewed with Niigata soft water by Echigo toji, it achieves a clean, dry profile with a firm backbone and good cut.
