Named for Echigo Takada, the castle town where this brewery has stood since 1643, this tokubetsu honjozo uses Gohyakumangoku at 55% polish. The soft snowmelt water and Echigo toji craftsmanship produce a lean, dry style that reflects the regional Niigata character.
