Tenichi Namacho-zozake is a cold-stored unpasteurized sake from Hayakawa Shuzobu in Kawagoe Town, Mie Prefecture, a brewery founded in 1873 that crafts sake using strong koji and house yeast for umami-forward character. Stored raw and pasteurized only once before bottling, it retains a fresh, lively quality while developing a smooth, rounded body from cold storage maturation.
