Description

A vintage yamahai junmai made with Kita Nishiki rice polished to 66%, aged at room temperature over three or more years. Extended maturation develops a toasty, caramel-and-nut aromatic profile alongside a light amber color, with rounder, deeper umami that opens up further at high serving temperatures.

北錦で仕込む山廃は、玉川の酵母無添加「自然仕込」シリーズの中心的存在。その原酒に加水し、常温で3年以上熟成させることで、色、味ともにコクが増しました。カラメルやナッツを思わせる香ばしさは、自然についた淡い琥珀色と相まって、深まりゆく秋の風景を連想させます。思いきり熱い燗にすると、長い年月をかけて醸し出された旨みに透明感と優しさが生まれます。
