Description

Brewed with a high proportion of koji and based on a recipe dating to 1712, this aged junmai shows deep, complex character best enjoyed at room temperature or lightly warmed. Notes of toasted hazelnut, golden raisin, dried mushroom, roasted squash and maple syrup layer over a savory, umami rich base. The extended aging lends a decidedly autumnal, savory sweet profile.
