玉川の「自然仕込」シリ-ズは酵母無添加で造られています。 清酒酵母はアルコールが18度以上になると弱って死滅するというのが、醸造学の通説です。 ところが木下酒造では毎年、自然仕込の純米原酒でアルコール度数20%以上の酒を醸しています。 さらに年に一度、蔵に住みついている酵母の発酵力の限界を試すのが、この「白ラベルバージョン」。 名前の由来は、通常の山廃のラベルでは赤で書かれている「山廃」の文字が白いことから。 辛口でありながら、旨みの力で辛さを感じさせない。驚異的なアルコール度数なのに、不思議なやさしさのある味わいです。
