Yamada Nishiki is used for this Chotokusen (super-premium) Daiginjo from Nomura Jozo in Ibaraki, a brewery founded in 1887 that uses spring water from the Tsukuba Mountain foothills. The house style favors a fragrant, silky mouthfeel with rice-derived umami, earning the brewery a Platinum Award at the KURA MASTER competition in France.
