Description

Chiyo Nishiki rice at 60% polishing forms the base of this yamahai junmai, brewed at an Ibaraki brewery that draws spring water from the Tsukuba mountain system. The yamahai method imparts a firm acidity and a mature depth that evolves toward a rounded warmth when served hot.
