Shinshun Hatsushibori Daimon Hojun Namazake is a fresh-pressed, unpasteurized new-year release from Daimon Brewery in Katano City, Osaka. Using Yamada Nishiki in a Junmai Ginjo released immediately after the season's first pressing, this 1826-founded brewery's shiboritate applies its ginjo-method philosophy , tsukihaze koji, small batches, soft Ikoma mountain water , to a vivid, celebratory seasonal expression.
