Yamada Nishiki polished to 35% — a level of refinement that removes more than two-thirds of each grain — anchors this junmai daiginjo from the Fushimi brewery founded in 1677. The intensive milling produces a sake with a rich, expansive umami alongside a sharp, clean finish that earned it platinum recognition at the Milano Sake Challenge 2019 and gold at London Sake Challenge and Kura Master competitions. Soft Shiragiku spring water from Fushimi contributes the smooth, rounded character that distinguishes the Shinsei house style.
