Shinsei
Yamamotohonke is a Fushimi brewery in Kyoto with more than 300 years of brewing history, drawing on the renowned mineral-light Fushimi groundwater called Shiragiku-sui to produce its flagship brand Shinsei. The name Shinsei derives from a Tang dynasty poem that praises sake as a divine and sacred thing capable of dissolving a hundred sorrows, a classical provenance that the brewery has honored since its founding. Brewed as a robust, food-pairing sake defined by what the brewery calls rich body and clean finish, Shinsei is produced across a range from honjozo to junmai daiginjo including the acclaimed Tessen dry expression.
