Junmai brewed with Gohyakumangoku rice polished to 65% from Fujiseda, Shizuoka. Gohyakumangoku yields a lighter, cleaner rice character; the soft Setogawa River water and Shizuoka yeast give the sake a rounded mouthfeel with gentle, unobtrusive acidity.
