Sawamasamune Daiginjo is the prestige expression from Furusawa Shuzo in Sagae, Yamagata, a brewery founded in 1836 by safflower merchants. Yamagata's GI-designated sake rice and the Mogami River basin's soft mountain water define the refined, clean daiginjo character of this nearly 200-year-old house.
