Sawamasamune Junmai Ginjo Dewanosato is brewed with rice from the Dewa region (old name for Yamagata/Akita), honoring the agricultural heritage of the Tohoku highlands. Furusawa Shuzo in Sagae, founded by safflower merchants in 1836, produces a clean, rounded junmai ginjo shaped by GI Yamagata standards.
