Description
Ryu Tokubetsu Junmai Omachi Rokuju Nama from Kawanishiya Shuzoten in Kanagawa uses Omachi rice and is bottled as a fresh nama (unpasteurized) release. The name suggests a 60% polish ratio, allowing the full, earthy complexity of Omachi to come through with minimal refinement, producing a sake with firm body, deep umami, and lively raw character.

"Tanzawa", which was born from the brewery's wish to make Junmai Ginjo Sake with the best rice and cooperating with local farmers, has a sense of unity with food. Instead of alcohol standing, alcohol value the taste of food and the food enhances the taste of sake. The deep flavor and lingering lingering spread in the mouth like a transparent mountain stream of Tanzawa.
