Ryu is a premium label from Kawanishiya Shuzoten, a junmai-only brewery founded in 1897 in Yamakita-cho, Kanagawa Prefecture, at the foot of the Ashigara Plain. The brand's production philosophy centers on reading the character of each year's Ashigara Wakamizu rice harvest and adapting the brewing approach accordingly, with bottles distributed through only a handful of specialist retailers.
