Yamada Nishiki, Japan's most celebrated sake rice, is the base for this junmai daiginjo, aged in the bottle as a bingakoi namagenshu without pasteurization or dilution. Bottle aging allows the undiluted sake to develop gradually in the absence of heat treatment.
